Kohlrabi, carrot and radish slaw

Welcome to the Satisfied Cravings blog! This is a space where I will share my most recently tested healthy recipes as well as old favorites. This summer I will have another special treat. Since it’s such an amazing time to shop for local produce (at least here in New England), I will give you tips and ideas on what to do with the produce you may spot at your local farmers market. I actually belong to the Farm School vegetable CSA so I’ll show you what I pick up every week and what I do with my produce loot :)

Here are this week’s goodies:

The strawberries were incredibly sweet and juicy so they were eaten “straight up.” The rest of the veggies will be incorporated into our meals for the week. Those purple alien looking things? That’s kohlrabi and they were the star of this week’s featured recipe for kohlrabi, carrot and radish slaw:

I always look through magazines, cookbooks and blogs for inspiration- this slaw recipe I found on the Green Thyme blog and it incorporated 2 of the veggies in my week’s CSA! I omitted the chives and cut way down on prep work by shredding the kohlrabi and carrots in my food processor (no need to even peel them first!).

Kohlrabi on it’s own has a bit of a mild radish bite (and if you cut it into thicker slices, it will be crunchy like jicama) but in this slaw it beautifully absorbed the mustardy dressing. The result was an amazingly refreshing salad that will be perfect at your next cookout or as a side for a weeknight dinner!

    This is my 3rd year with a CSA and I LOVE it!! I’ve gotten to try so many things I never would’ve purchased on my own, and the taste of the veggies are sooooo much better than those bought in a supermarket. I have to try the kholrabi slaw, it looks delicious!

      I agree, Tamara! I bought organic strawberries at Whole Foods and then got a quart from the CSA and they tasted like they were almost different species. The CSA strawberries were so juicy and sweet – amazing, while the grocery store stuff tasted almost green (although looked beautiful)! I hope there will be more at tomorrow’s pick up :)
